California Fried Rice
Ingredients:
1 Tbsp (15 mL) vegetable oil
1/2 cup (125 mL) raisins
4 green onions
1 stalk celery, thinly sliced
1 chopped red pepper
1 cup (250 mL) finely chopped cooked ham
3 cups (750 mL) cooked long grain rice
4 eggs, slightly beaten
1 Tbsp (15 mL) soy sauce
Toasted sliced almonds, optional
4 cups (1 L) cooked oriental vegetables

Instructions:
In a large skillet, heat oil over medium heat. Sauté raisins, green onions, celery, red pepper and ham until vegetables are tender-crisp. Stir in rice. Make well in centre of rice mixture; add eggs and soy sauce. Cook, gradually stirring eggs into rice, until eggs are just set. Garnish with toasted sliced almonds, if desired. Serve with oriental vegetables.
Makes 4 servings.
Tip: Cooked rice will keep up to 1 week in a tightly covered container in the refrigerator and up to 3 months in the freezer.
Suggestion for Complete Meal: Serve with whole wheat roll, an apple and yogurt.
