Spinach Appetizers

Spinach Appetizers

Ingredients:
4 tbsp (60 mL) butter
3 eggs
1 cup (250 mL) all-purpose flour
1 cup (250 mL) 2% milk
1 tsp (5 mL) salt
1 tsp (5 mL) baking powder
1 lb. (500 g) Edam cheese, grated
1-10 oz (280 g) bags of spinach, rinsed and chopped
 
Instructions:
Preheat oven to 350°F (180°C). Melt the butter in a 9 x 13-inch (23 cm x 33 cm) pan in the oven. Beat eggs well. Add flour, milk, salt, baking powder and grated cheese.

Squeeze as much water from the raw spinach as possible. Add to above mixture and blend well. Pour into prepared pan. Bake for 35 minutes. Allow the cooked mixture to stand for approximately 45 minutes before cutting. This dish may be cooked ahead and reheated before serving.
